Tortilla of Potatoes
Ingredients for 4 persons
4 big potatoes
1 big onion (or 2 smalls)
6 - 8 oeufs (ie reciepe) Olive Oil salt, pepper, netmug powder
.Peel the potatoes, slice them thinly. Heat some olive oil in a non stick frying pan, when the oil is hot, add the potatoes and cook gently. During the cooking, add some oil if necessary. !! ALWAYS stir regularly !! Cover meanwhile (this will accelerate the cooking and avoid to much browned potatoes ).
.Cut thinly the onion, brown them with olive oil in a another pan. Keep.
When the potatoes are cooked, reduce the fire and add the onion.
Stir all together during 1mn moreless. Stop the fire and keep.
.Beat 6 eggs forcefully to have them homogeneous.
Add salt, pepper, netmug, following your tastes.
Add the potatoes/onion in these eggs.
!Verify that the beat eggs cover them completely, otherwise beat 1 or 2 eggs more and add them!
Stir very well with a fork (if necessary, mash the potatoes too big, the target is to coat all the potatoes with eggs)
.Heat some olive oil in non adhesive frying pan enough large to contain all these ingredients and pour them into the pan. Cook on gentle fire. Verify that the brims do not stick.
Once the middle of this tortilla begins to dry, take a dinner plate a bit larger than the pan, press it on. Return the tortilla quickly. Put it back in the pan to brown the other side in sliding into gently. With a fork or spatula, round it off.
Brown gently during 1 mn.
Serve hot, warm, cold.
For an entrée or main dish along with a green salad or for tapas diced along with chorizo, lomo or ham
Our favorite presentation: tortilla along with a coulis of tomatoes -or a nut of our jellies of aromatics- and some slices of lomo.
Tricks and variants:
.If you do it for the first time, I recommend you to use a small frying pan of diameter 10-15cm, better than a bigger one. Easier to return the tortillas and nice to present to children.
.You can also prepare it the day before, the tortilla is better when reheat. To keep in the fride during 72h maxi.
.Combine also potatoes+zucchinis or potatoes+red peppers.
