Ingredients for 4 persons
1 chicken of 1.2 kg
1 candied lemon
1 clove of garlic
1 pinch of rosemary
2 shallots
2 laurel leaves
150g of semolina
1 soupspoon of olive oil
1 teasponn of sugar
6 dried apricots
1 soupspoon of dried grapes
Pepper, salt
.The eve, put into a saucepan the grapes, apricots and the sugar. Cover of water and put to boiling.
Cover the saucepan and switch off the heat, rest it.
.Put the semolina into warm water and 2 soupspoon of salt to inflate it.
Cut your chicken in 8 pieces.
Peel the garlic an shallot, mince it in nubs.
In a pan, color the pieces of chicken in olive oile and salt.
Add schallot, garlic, laurel, rosemary and the prepared grapes/apricots with the juce.
Put some water if necessary to re-cover the ingredients.
Cook covered during 40 min.
Plunge the semolina duly wringged out, into hot water during 5 min.
Cut the lemon in 8 pieces and add them to the chicken 5 min.(not more) before the end of cooking.
Serve this delicious tagine on the semolina.
